The Tom Collins (of the Collins family of drinks) is such a classic cocktail, that the highball is often referred to as a Collins. A tried and tested classic formula of spirit, lemon &amp; sugar lengthened with a splash of soda. Originally mixed with an Old Tom Gin.&nbsp;Bartender Tip:Switch out the Gin for pretty much any spirit and you create another from the Collins family

Fill both your highball glass and shaker with ice

Ice scoop

Highball glass

Ice Box

Pour in the Gin, lemon juice and sugar into your shaker

Jigger

Sugar syrup

Lemon juice

Soda water

Add ingredients

Close the shaker and shake hard for 7 seconds

Bar Spoon

Shake

Take off the small top off the shaker and strain out the mix into glass.
