Shaking and Aeration

Shaking is one of the most visible techniques behind the bar, but its purpose goes far beyond simply mixing ingredients.
When a bartender shakes a cocktail, three things happen at the same time. The drink is chilled, diluted, and aerated. Each of these elements plays a role in the final result.

Shaking is primarily used for cocktails that contain citrus, syrups, juices, or other non-alcoholic ingredients. These components need to be fully integrated. Stirring alone is not enough.
The movement of ice inside the shaker rapidly lowers the temperature. At the same time, a controlled amount of water is introduced as the ice melts. This dilution
softens the alcohol and brings the drink into balance.

Aeration is what gives a shaken drink its texture. As the liquid moves aggressively inside the shaker, air is introduced. This creates a lighter, slightly frothy texture that is essential in many cocktails.

Consistency is where the technique becomes important. A weak shake will not chill or dilute the drink properly. An overly long shake can lead to too much dilution.
Behind the bar, a consistent shaking technique allows the bartender to produce the same result every time, even under pressure.


Stirring and Clarity

Stirring is often seen as the quieter counterpart to shaking, but it requires just as much precision.
Where shaking introduces air and texture, stirring focuses on control. The goal is to chill and dilute the drink without disturbing its clarity.

This is why stirring is used for spirit-forward cocktails such as the Martini or Manhattan.
The bartender moves the liquid smoothly around the ice in a controlled motion. The aim is to reach the correct temperature and dilution without overworking the drink.

Clarity is a key indicator of proper technique. The drink should remain transparent and clean.

A rushed stir leads to harsh drinks. Over-stirring can flatten flavors.
Consistency in stirring ensures that every drink is delivered with the same balance and texture.
