Every member of staff plays a role in following these rules.
1. Licensing Basics
Your venue must operate under a valid premises licence issued by the local council.
The licence defines:
- When you can serve alcohol
- What activities are allowed
- Any specific conditions for the venue
Operating outside these conditions is illegal.
2. Designated Premises Supervisor (DPS)
Every bar must have a named DPS.
- The DPS holds a Personal Licence
- They are responsible for ensuring the venue complies with the law
- Staff must know who the DPS or manager on duty is
3. Age Verification (Challenge 25)
If a guest looks under 25, you must ask for ID.
Accepted ID:
- Passport
- UK driving licence
- PASS card
It is illegal to sell alcohol to anyone under 18.
4. Refusing Service
You must refuse service if a guest:
- Is under 18
- Is visibly intoxicated
- Is behaving aggressively
- Cannot provide valid ID
Serving a drunk person is illegal and can result in fines or licence penalties.
5. Licensing Hours
Alcohol can only be served during the hours stated on your licence.
- Guests must stop drinking by closing time
- Continuing service outside these hours is a breach of the law
6. Record Keeping
Bars may be required to keep records such as:
- Refusals of alcohol service
- Incidents or disturbances
- Ejections or security issues
These logs may be inspected by authorities.

At the start of your shift:
- Know who is responsible (manager or DPS)
- Be aware of licensing hours
- Be ready to check ID
During service:
- Monitor guest behaviour
- Communicate with colleagues about issues
- Refuse service when required
After incidents:
- Inform the manager
- Log the situation if required
